Shrimp Scampi

INGREDIENTS
♡  1+ lb shrimp
♡  4 tbsp butter
♡  5 cloves garlic, minced or paste
♡  1 handful cilantro, chopped
♡  3 tbsp lemon juice
♡  1/2 tsp lemon zest
♡  1/4 cup dry white whine
♡  1 tsp red pepper flakes
♡  Olive oil
♡  Celery salt & pepper

OPTIONAL
♡  Use broth instead of dry white whine
♡  Corn, sweet potato, spinach, & lion’s mane mushrooms
♡  Multi-grain rice

INSTRUCTIONS:

  1. Heat oil in pan. Fry garlic until fragrant then melt butter and add shrimp. Salt and pepper to taste. Cook shrimp until both sides appear lightly cooked (1-2 min).
  2. Pour in the whine and add red pepper flakes. Cook until whine has dissipated half way. Do not overcook the shrimp!
  3. Stir in lemon juice, zest, and cilantro. Toss for 30 seconds then remove from heat.
  4. Serve with your choice of vegetables and rice, noods, pasta, or bread.
